Whole Shoulder of Lamb
Our whole shoulder of English lamb weighs in at a hefty 2.4kg – 2.7kg.
Shoulder of lamb is one awesome cut. A hugely underrated cut, we tend to find many people avoid it due to it being a little fattier than the leg but don’t let this put you off!
This part of the animal works hard, so the meat from a lamb’s shoulder is full of flavour. It has a sweeter flavour than the leg and is ideal for slow roasting as it stays succulent during cooking when the fat will mostly melt away. Any fat left can simply be removed (if preferred) as the joint simply falls apart when pulled with a fork after stewing and slow-roasting – that’s when the magic of pulled lamb happens.
Shoulder of lamb is a definite family favourite of ours that’s for sure!
