The sirloin is nestled between the fore rib and the rump and is a favourite steak of many. Lean and deliciously tender, the sirloin has the perfect amount of fat resulting in a roasting joint that retains moisture and flavour.

Dry-aged for 28-40 days, sirloin is lean in nature, with the perfect amount of fat to keep the joint succulent during cooking.
